Suggest a better descriptionPreheat the oven to 350. Grease a 9x5 metal loaf pan and line the bottom with parchment paper allowing a 2" overhang on the long sides.
Toast the pecans for about 7 minutes.
In a medium bowl, whisk the flour with the baking powder, baking soda and salt.
In another bowl, beat the eggs with the banana, sour cream, vanilla and rum.
In a stand mixer, beat the butter with the granulated sugar at medium until fluffy, about 2 minutes. At low speed, gradually beat in the wet ingredients until incorporated, then beat in the dry ingredients until just combined. Fold in the pecans.
Scrape the batter into the prepared pan and bake in the center of the oven for about 1 hour and 20 minutes , or until a toothpick comes out clean. Place the pan on a rack and let cool about 45 minutes. Take out of the pan and dust with confectioners' sugar.
