In a saucepan, combine the potatoes with cold water to cover and add salt. Bring to a boil and simmer until tender. Drain and move potatoes to a cookie sheet lubricated with olive oil.
Flatten with a potato masher, or better yet the bottom of a glass jar.
Drizzle with more olive oil, sprinkle on salt and pepper plus any other seasoning you like (garlic powder, parsley flakes, crumbled bacon, etc.).
Bake in a 425 degree oven until desired crispiness.
