Set up a smoke-roasting system. (A HD aluminium pan with wood chips, wire rack, foil to cover) Heat the pan of wood chips on top of the stove until smoke starts to appear Lay salmon filets on rack and place in the pan. Cover, and turn heat to medium-low. Smoke -roast for 2 minutes.
transfer pan to a pre-heated 400F oven and continue roasting for another 8-10 minutes, untill the flesh is just cooked through.
