1- Remove the corned beef brisket from the packaging, discard the spice packet. Soak the corned beef brisket in water for 2-8 hours, changing water multiple times to help draw out brine.
2-When ready to cook, set Trager to 265-275 and pre-heat, lid closed. Rub mustard and dry rub on meat, all sides
3-Put brisket directly on grill grate, fat side up and cook for 2 hrs.
4-Wrap brisket on brown paper and return to grill, fat side up. Continue to cook until internal temp is 203
5- remove from grill and allow the meat to rest at room temperature, in the paper wrap, for 20 min.
