Suggest a better description1. Preheat smoker to 180°.
2. Trim excess fat off roast
3. Super smoke roast for one hour at 180°
4. Prep crock pot with liner and spread one can of cream of mushroom soup on bottom of liner.
5. Slice one onion into 1/2" discs (unseperated rings.)
6. Remove roast from smoker after one hour or so.
7. Turn crock pot to low before you season top of roast with half packet of beef onion dry soup and let stand for 10 minutes while crock pot preheats.
8. Place roast seasoned side down in soup lined crock pot and season other side if roast with remaining beef onion dry soup.
9. Place onion discs tightly together on top of seasoned roast and spread second can of cream of mushroom soup on top of onions try not to knock onions off roast
10. Cook on low for 5-6 hrs before adding remaining vegetables.
11. Cut potatoes and carrots evenly into 1 inch cubes, cut second onion into 1/2 " discs and rinse can of sliced mushrooms.
11. After 5-6 hrs attempt to lift roast in one piece with tongs and tuck vegetables under roast and cook for remaining 2-3 hrs or until carrots are cooked to your liking. Serve with rolls or bread and butter.
(May place vegetables under roast at beginning of slow cook if you like them mushy)
