Simple but delicious.
1- Put the onion and potatoes in a large sauté pan. Pour over the vegetable stock and simmer for 6-8 minutes, until potatoes are soft with a little bite. Add the smoked haddock.
2- Tip in the creamed corn and add milk.
3- Gently simmer for 5-7 minutes until the haddock is cooked. It should flake easily when pressed with a fork. Serve
