SERVING TIP Serve two fishcakes per person as a main course, one as a chic starter. Alternatively you can make 4 jumbo fishcakes I0cm-12cm across. These will need longer to firm up before cooking, so increase the chilling time accordingly and adjust the frying time to 3-4 minutes each side or until cooked through and golden.
Place the smoked haddock in a pan with the onion and milk, and poach for 4-5 minutes or unfit the fish is just cooked. Remove the haddock and strain, and reserve the onion-flavoured milk. When cool enoush to handle, flake the haddock, discarding any skin.
Melt the butter in a heavy pan, stir in the flour continue cooking for 2 minutes then gradually add the milk, a little at a time, whisking until you have a thick, smooth paste that will bind the fishcake ingredients together. Gendy fold in the remaining fishcake ingredients. The mixture is quite
loose at this stage. Divide into 8 and shape into fishcakes 5cm-6cm diameter. Chill in the fridge for at least an hour to allow the fishcakes to firm up before frying.
Meanwhile, use a vegetable peeler to peel thin strips from the cucumber. stopping when you get to the seeds. Toss the cucumber strips with the salt, leave to stand for 5 minutes until softened, then wash, drain and pat dry. Combine the vinegar and icing sugar and add to the drained cucumber
strips. Leave to marinate for an hour.
When ready to cook the fishcakes, heat a few centimetres of oil in a deep frying pan. Whisk the egg with the milk Dust the
fishcakes with flour, patting them into shape as necessary then dip into the egg mix. followed by the breadcrumbs to coat evenly. Fry in batches for 2-3 minutes each side, turning carefully, until cooked through and golden. Serve with the cucumber and the mayo on the side.
