Suggest a better descriptionTrim off excess fat, remove all blood clots, bone, sinew, cords etc. and throw out.
Grind all lean meat thru a 3/8" or 1/2' grinder and all the fat meat thru a 1/8" grinder.
Place in mixer, adding all the ingredients and mix until evenly distributed.
Stuff the casings and the allow the outside of casings to dry.
Sausage is placed in a preheated smoker at 130 degrees F. with dampers wide open.
Keep this temperature until casings are dry. Gradually increase temperature of smoker to 160 - 165 degrees F. with dampers 1/4 open. Apply heavy smoke and keep in smoker until internal temperature of sausage reaches 152 degrees F. (internal temperature is decided by inserting, thermometer in 1 sausage), once the internal temperature has been reached remove from smoker and shower with cold water until internal temperature has been reduced to 110 degrees F. Allow the sausage to hang at room temperature for about 30 minutes or until desired bloom (color) is reached. Place in cooler 38-40 degrees F. overnight, then sausage can be packaged and frozen.
