Sweet and Savory Sauce for Smoking and The Table
I usually make this sauce when Smoking Pork Loin, Butt, or Shoulder. That being said, I prefer to smoke the onion and the garlic wrapped in foil together and put in the smoker with the meat for about 20 minutes or so just because it helps mince the garlic and add the smokey flavor to the onion.
Mix all the ingredients while whisking in one at a time. By the time you add the warm onion, the sauce would have been perfectly mixed to glaze over the pork every hour for the smoking process. This will help keep cuts like the loin moist throughout the cook and keep the grill master happy each hour while picking at the meat and dipping it in the sauce before tasting a masterpiece.
