3. Add white wine and reduce by half, then slowly incorporate fish stock until looking like overcooked risotto.
4. Add the sun dried tomatoes, cream, cheese, smoked salmon and herbs making sure its mixed through thoroughly. Season.
Ball arancini into 120g balls
Whisk eggs and milk together
Step 1 - Flour each arancini ball and pat excess flour away.
Step 2 - Roll each ball in in egg wash mix.
Step 3 - Roll each ball into breadcrumbs until fully coated.
Step 4 - NEEDS TO BE REPEATED TWICE!
Once the balls are made and bread crumbed they are ready for freezing, this recipe will fit into a parchment lined grey shallow tote.
Freeze overnight.
