Fantastic salmon chowder recipe! Simple to make - works well in the crock pot.
Method: In medium sauce pan, bring potatoes to boil in 2 c. lightly salted water. Reduce heat, cover and simmer for 20 minutes. In soup kettle, bring clam stock and wine to a slow boil. Add vegetables and seasonings, reduce heat and simmer until vegetables are tender – about 15 minutes. Drain potatoes and add to vegetable mixture, along with the corn and salmon. Bring to high simmer. Make a roux by mixing the melted butter and flour. Stir roux into soup and cook slowly, until it begins to thicken – about 1 minute. Stir in cream and heat through. 6-8 servings.
Short cut: use "simply potatoes" they are already cubed, come with onion and can cook with the soup in the crock pot instead of ahead of time. I have successfully made this chowder in the crock pot several times. Also - its fantastic re-heated!
