Delicious smoked salsa to fit any occasion.
Smoke the tomatoes, onions and Jalapeños for approximately 3-4 hours. Also roast the garlic at the same time with the tops cut off. Drizzle a small amount of olive oil over the garlic. Wrap the garlic in foil and place it on the smoker.
When cooked, peel the skin off of the tomatoes and blend them in a food processor.
Chop up the onions, Jalapeños and garlic and add to the tomatoes in the food processor. Add in the vinegar and lime juice and blend to your desired consistency. Also add salt and pepper.
NOTE: 2 Jalapeños will yield a mild salsa, 3-4 Jalapeños will yield a medium salsa and 5 Jalapeños will yield a hot salsa.
