While rice is cooking, slice sausage in thin slices. In a large skillet, cook sausage, onions, peppers, and celery over medium high heat until vegetables are crisp-tender. Add tomatoes, broth, pineapple chunks, garlic powder and pepper. Cover and simmer 5 minutes. Blend cornstarch with pineapple juice. Pour into meat and vegetables. Cook stirring until clear and thick; about 2 minutes. Serve with rice.
