Suggest a better descriptionSmoke shrimp in a smoker with hickory smoke. They should be firm and opaque all the way through. Cover and refrigerate prior to use. (Can be done up to 24 hours in advance) allow shrimp to come to room temperature before assembling.
Make the vinaigrette in a food processor. Combine all of the remaining ingredients and puree until very smooth. Taste for seasoning.
Ladle enough of the vinaigrette on a salad plate to coat the plate. Arrange 6 shrimp on top of the vinaigrette and scatter the enoki mushrooms over the top.
