Slice the yellow squash or zucchini and set aside. Remove trout from tin. Optional, remove skin. Place trout on paper towels to absorb extra oil. Set aside. Chop the apple, mince the scallion, zest the lemon and add to a small mixing bowl along with the drained trout. Add a squeeze of fresh lemon juice and mix well. Spread trout salad on top of the squash or zucchini slices and serve.
