Combine wild rice, water and 1/2 teaspoon salt in medium, heavy bottomed saucepan. Bring to a boil. Reduce heat to low. Cover and simmer until rice is tender but not mushy, 55-60 minutes. Drain off any water and set aside to cool.
Meanwhile, chop nuts, dice celery and turkey, and mince shallot. Combine in a salad bowl.
Stir together olive oil, vinegar, and soy sauce in a small bowl.
Add rice to the nut mixture.
Pour dressing over, season with salt and pepper, and gently toss mixture to coat.
