Try this Smoked Turkey-Artichoke-Sun Dried Tomato Salad recipe, or contribute your own.
Suggest a better descriptionUse "dry" sun-dried tomatoes, not ones packed in oil. Reconstitute according to package directions (soak in boiling water). Chop fine. We used turkey pulled from the legs, thighs, etc, as we had very little breast meat left over. Skin on the legs and thighs was left on. Chop fine. Artichoke hearts were generic store brand canned artichoke hearts. DO NOT use marinated ones! Mix all in a bowl and moisten to desired consistency with mayo. Let sit in fridge several hours or overnight to allow flavors to blend. This is a very different sandwich spread, and is great served on fine crackers (actually saltines worked pretty well, also!). Adapted from a dish brought home by my son from Wolf Trap.
