Mix rub ingredients.
Spatchcock the chicken by removing the backbone and then breaking the breastbone so that it lays flat.
Rub olive oil all over.
Apply rub to the back of the chicken, apply the rest of the rub to the skin side.
Smoke the chicken for 1-2 hrs until internal temperature of 165 in the breast.
