Cube potatoes (1/4-1/2 inch pieces) with skins on and boil. Drain in colander and return to pot. Mix with cheese and crumbled bacon while hot and let sit. Stir together mayo, milk, vinegar, liquid smoke, remaining bacon fat, jalapeno and minced garlic to taste. Toss dressing over salad with green onions and parsley and chill.
