Ingredients
2 blocks cream cheese, softened
8 oz pepper jack cheese, cubed or shredded
8 oz mozzarella cheese, cubed or shredded
1/2 cup sour cream or plain Greek yogurt
1 cup milk
1 can diced green chiles
3-4 chipotle peppers in adobo sauce, finely chopped
1 tsp garlic powder
1 tsp chili powder
1/2 tsp cumin
1/2 tsp smoked paprika
Optional Toppings: Cilantro, jalapenos, diced tomatoes, queso fresco, avocados
Instructions
Melt the cheeses, sour cream, and about 1/2 cup of milk in a large saucepan.
Add in green chiles, chipotle peppers, and seasonings.
Add in more milk as needed to thin out the consistency.
Serve warm with tortilla chips. Enjoy!
