Great recipe for homemade BBQ chicken. It is very easy to make. It has just a touch of heat, but not too much. Only really sensitive pallets will think it is too much.
Sauce Prep:
Mix brown sugar, mustard, black pepper, salt, cayenne pepper, vinegar, water, lemon juice, onions, and butter in a pot. Simmer on the stove for 20 minutes,
Stir in ketchup, Worcester sauce, and liquid smoke to the pot. Bring to a boil. Remove from heat. Stir in Tabasco sauce.
Chicken:
Pour sauce in broiler pan over chicken breast. Bake in oven for 1 to 1 & 1/2 hours until chicken is done. Serve.
Variation: You can use half chickens as well. If so, place skin down and bake for 3-4 hours until chicken is done. You will need to baste the chicken periodically.
Best for about 18-20 2 oz boneless breasts. You want to have plenty of sauce to pour over chicken when serving.
