Preheat oven to 350 degrees. Line baking sheets with parchment paper and put in refrigerator to chill.
Chill dough for at least 30 minutes before baking. Chill dough and cookie sheets between batches.
Mix the sugar mixture together. Set aside.
Roll dough in sugar mixture and press onto baking sheet.
3 oz servings by weight at restaurant.
1 inch balls at home.
Set cookies on baking sheets for 2-3 minutes after baking and then remove to cooling racks.
