Simply yum!
In large bowl sift flour, salt and baking powder. In the bowl of your electric mixer, beat the butter and sugar until smooth, about 2 to 3 minutes. Add the eggs, one at a time, beating well after each one. Give the bowl a good scrape before adding the vanilla. Add the flour mixture, a little at a time until you have smooth dough.
To form balls, we usually will use our small cookie scoop. Scoop all the dough into balls and place on to a lined cookie sheet. Place this cookie sheet into refrigerator to cool while mixing the remaining sugar and cinnamon together. Roll the dough balls around in this mixture, before baking or placing into a freezer container for later use. If you prefer, use the bottom of a glass to smoosh the dough flat, for a snappy cookie.
To bake, place covered balls onto a parchment lined cookie sheet, bake in a preheated oven set at 400 in the center of the oven for 8 to 10 minutes.
Notes: We have had great success using our toaster oven for small batches, which is why we will freeze the dough. Allow dough to assume room temp before cooking or reduce the oven temp to 350 and bake a few minutes longer. We have also added orange zest and ? teaspoon of orange extract for a tasty shot of Vitamin C!
