Original recipe by Rachael Ray, tweaked to my liking.
Heat a rice pot over med-high heat. Add the oil and butter. Once butter is melted, add the rice and season with salt and pepper to taste. Lightly brown the rice for a few minutes. Add the wine and stir, allowing it to evaporate completely. Add the chicken stock and bring to a boil. Reduce the heat and cover.
Once the rice is almost done, add the snow peas. Just lay them on top of the rice, don't stir in. The snow peas will steam while the rices finishes cooking. Once rice is done, stir in the snow peas, and serve.
A great side to any Asian-style meal.
