Mix coconut, sugar, flour, and salt in large bowl. Stir in egg whites and almonds extract until well blended. Drop y tablespoonfuls onto lightly greased and flour cookie sheets. Bake 20 min or until edges of cookies are golden brown. immediately remove from cookies sheet. Cool on wire racks. Drizzle with melted chocolate if desired. Make about 2 dozen.
