In a large pot over med hi add 2 TBS oil – add Onion, garlic, carrots and cook 4 to 5 minutes
Add mushrooms, zucchini, bok choy – cook 2 to 3 minutes
Add stock and cook to bubble – 5 minutes – add bean sprouts
GARNISH:
Sesame seeds – coriander – chili powder – cayenne
In a small bowl, combine the toasted sesame seeds, ground coriander, chili powder and cayenne pepper and reserve for garnishing the soup.
Top noodles with a splash of Tamari – add soup and garnish
