Sudden visitors and an empty pantry? This recipe is easy to make, quick, and can be modified about 100 ways to serve with whatever you do have in your pantry. Have fun with it!
Preheat the oven to 400F.
In a small saucepan combine the water, butter and salt and bring to a boil.
Reduce the heat and add the flour all at once and stir it vigorously with a wooden spoon.
Cook until the mixture has formed a ball and has a slightly sweaty sheen to it and it has pulled away from the pan. Transfer the mixture to a mixing bowl and let cool for 3 to 4 minutes.
The mixture does not have to be cold, just cool enough not to cook the eggs when added.
Stir in the eggs 1 at a time. Do not add the second egg until the first is fully incorporated.
Transfer the mixture to a pastry bag and pipe 1-inch balls onto a cookie sheet,
or just drop (tea) spoonfuls onto the baking sheet.
When done dip your finger in water and smooth the top of each ball.
Be sure to leave at least 1-inch expansion room between the balls.
Bake in a preheated oven for 20 to 25 minutes, rotating the tray halfway through the cooking time to insure even cooking. When done, the puffs should be light, airy and dry inside.
Cool on a rack.
When ready to serve, cut a hole in the side of each puff and fill with whipped cream.
Top with Chocolate sauce and a dollop of whipped cream.
Other common fillers are Vanilla and/or Chocolate Pudding,
Apple sauce and different kinds of (mashed) fresh fruit.
Can be served hot or cold to taste, so can be made in advance.
Cooking Eclairs is a great idea for children's Birthday Parties! While other children are playing games in the living room, take no more than 5 at a time into the kitchen. Let them cook, stir and prepare baking sheets. When all children had their turn and the puffs are baked, gather them around the table where you have prepared bowls with whipping cream, puddings, fruit etc. Serve tea or lemonade and the kids will love to experiment with different fillings and then eat their home made puffs!
