There’s a short window for soft-shell crabs, and when that window is open, frying them up and serving them as part of an already perfect BLT is a favorite strategy at seafood shacks and fancy restaurants alike.

In a large, straight-sided skillet, heat an inch of oil to 360°F.
Place the flour, Old Bay, salt, and pepper in a shallow dish. Dredge the crabs in the seasoned flour.
Working 2 crabs at a time, carefully place them in the oil—the crabs will splatter as they cook. Fry until crispy and golden brown, 2 to 3 minutes per side. Drain on a paper towel–lined plate. Season immediately with salt.
Spread mayonnaise on the bottom half of each bun and top with the bacon, dividing it evenly among the sandwiches. Add a crab to each bun and top with shredded lettuce, a couple tomato slices, and the top of the bun.
