Fry fillets until golden in olive oil
Place sole in oven to complete cooking
Add white wine to the pan and use a wooden spoon to scrape up any browned bits from bottom of pan
Add lemon juice and capers after wine boils for a minute or two
Swirl in butter and serve with parsley
