Delicious spicy Mexican meatball soup!
Throw all the spices and canned foods and diced carrots, red pepper, and half onion and garlic in slow cooker on high. While that is cooking add some red pepper flakes and garlic powder to mixture. Dont forget salt and pepper! Cook this for about two hours. But in the meantime Cook off rice. Set aside to get cold for later. Add bread crumbs an egg, mint,salt pepper and garlic powder to ground beef. Mix up with hands. Set oven to 315. Spray no stick spray on pan and start the rolling process! Roll meat mixture into balls then add an indent with finger and take a pinch of white rice to add to middle and fold meat mixture around it to cover the rice. Important to have the rice stay in middle! Continue to do this until all of them are done then place them in over to cook for about 20 mintues or until they are no longer pink inside. Remove from oven. While the meat balls are baking the mixture in the slow cooker should be really hot by now. You can finish off the cooking process by switching it to a pan on the stove. Simmer on low. Add the meatballs and simmer for 30 mins on low. Serve in bowls with crusty bread or tortillas! Enjoy!!!
