1. In a large pot add vegetable oil and saute the onions until softened. Add diced cooked ham and sausage and saute for 3-4 minutes before adding tomatoes, garlic, sofrito, and tomato sauce. Simmer for 5 minutes on medium heat.
2. Add Vegetable stock, adobo seasoning, olives, salt, and fresh cracked pepper. Bring to a boil at a medium to high heat.
3. Once at a boil, add the noodles and cilantro. Simmer until the noodles are al dente. Taste and confirm it is seasoned well. Served with warm bread or freshly fried plantains (Tostones).
