Casserole style pasta with cheese and sweet sausage
Place 1 Tbsp of oil in a large skillet adding the broken-up sausage and browning over medium heat. Remove browned sausage and drain on paper towels. Drain the skillet. Put the remaining oil into the skillet and fry the broken vermicelli for 3-5 min over medium heat. Add onions and garlic and cook for 1 min. Add tomatoes, cover and simmer for 5- 10min. Mix oregano, salt&pepper in the beef broth. Remove the tomato/noodle mix to a 3-qt ovenware dish. Add the beef stock mixture. Sprinle the crumpled sausage over the noodles. Cover with the Parmesan. Place (uncovered) into a 350 degree oven for 35 min. Serve hot.
