Cook onion until soft.
Add curry powder
Add chicken and stir.
Add stock. Bring to boil. Simmer for 30 minutes.
Remove chicken and shred.
Return chicken, add apple, lentils and coconut milk.
Simmer until lentils are soft and add lemon juice.
Top with coriander and serve with pappadums
