Suggest a better descriptionIn large ceramic pot, combine onion, fennel, thyme, bay leaves and white wine. Bring to boil. Simmer covered for 15 minutes.
Add mussels. Steam over high heat covered for 4-6 minutes. Shake until mussels are opened and tender..
Strain the mussels and broth. Reserve broth. Save some mussels in shell for garnish. Remove remaining mussels from shell and reserve mussels.
Sauté white scallions in butter - 3-5 minutes.
Add tomato. Cook 10 minutes.
Add stained mussel liquid.
Add heavy cream. Simmer 10 minutes.
Add mussels and green onion before serving.
Scallion-Garlic Bread
~ side dish serves 4-8 people
1. Pre-heat oven to 350 deg F.
2. In a food processor, pulse butter, garlic, and oil together until smooth. Add scallion and pulse a few more times until combined. The scallion should still be evident as individual pieces.
3. Slice bread open into two separate pieces. Spread a very good amount of butter mixture onto both halves. Sprinkle generously with kosher salt. Then season with pepper and paprika.
4. Toast in 350 deg F. for 15 minutes. Slice into separate pieces and serve hot.
