Suggest a better description1/11/14 made this after being Inspired by this Vitamix video https://www.youtube.com/watch?v=oN1LlWjo2Rs. You can be super creative & vary the ingredients. This was delicious & easy.
Add cashews & equal amount water to Vitamix. Allow to soak while making other items, then blend before adding other ingredients.
Saute onion & garlic in saucepan.
Add 1.5 cups water to saucepan, then add carrots and bell pepper. The intention is to heat ingredients and not cook them so it speeds up time in Vitamix.
Blend cashews
Add all ingredients to Vitamix EXCEPT SUNDRIED TOMATOES & 1 FRESH TOMATO.
High speed until well blended.
Add sundried tomatoes and pulse, then add diced tomatoes.
