Heat oil in a large saucepan.
Add and saute grated carrot and minced onion for several minutes.
Add and brown cubed beef.
Add broth or water, with salt, and boulion cubes if using water.
Bring to a boil, reduce heat, and simmer until meat is tender, about an hour.
Add chopped carrot, potatoes, and celery, return to a boil and simmer for 15 minutes.
Add package of thin noodles, continue simmering for 10-15 minutes.
Add salt to taste, black pepper, dried herbs, and lemon juice.
Heat through and serve.
