1. Crack eggs 3 at a time in a small container
2. Add into larger container and whisk eggs
3. Add salt
4. Gradually mix in milk
5. Continue with either Baked Eggs or Scrambled Eggs instructions
BAKED EGGS
1. Preheat oven to 325 degrees
2. Pour melted butter and spread onto baking sheet to grease pan
3. Bake eggs in oven, uncovered, for 15 minutes then stir
4. Bake an additional 15-20 minutes. Convection oven baking time will be less, check for doneness every 10 minutes or so
5. Place cheese slices on top of eggs and cook for an additional 5 minutes or until eggs are set
6. Cut eggs into 2 inch squares
SCRAMBLED EGGS
1. Coat pan or grill with butter
2. Pour in egg mixture
3. Cook eggs thru
4. Taste and make sure it has enough seasoning, add if necessary
5. Take eggs off pan or grill immediately and put them in a serving container (keep in mind that eggs will continue to cook in the container)
6. Place in warmer until ready to serve
BABY SPINACH
1. Wash the baby spinach, use the designated sink
2. Dry the spinach, use papertowels
SOURDOUGH BREAD
1. Butter the grill and grill both sides of bread, keeping the grill buttered. OR, each slice can be buttered individually and then grilled. Make sure not to burn the butter.
Assemble Sandwich
1. One slice of grilled bread
2. Place a small handful of baby spinach on bottom slice
3. Place 2 slices of ham
4. Place egg and cheese square
5. Place tomato slice
6. Cover with grilled bread
7. Place assembled sandwiches on a baking sheet and put in oven for 10 minutes to toast bread and keep sandwich warm
8. Serve warm
