Gently fold together sourdough starter water and 1 cup of flour. Leave this sit and proof for 20-30 mins.
Add salt, oil and remaining flour. Mix together till a dough ball forms.
Remove dough ball from bowl and kneed well for 10 mins.
Form the dough into a tight ball and place in a lightly oiled bowl. Allow to rise until size has doubled, about 1 hour.
Punch down and fold dough in quarters. Roll dough into a baguette shape, place in a lightly oiled baguette form and allow o rise a second time.
Fold dough a second time, roll out again into a baguette shape. Cut about 2 inches off and roll out into a circle about 3/8 inch thick. Cover a cutting board well with corn meal. Place the rolled circles on the board, cover and allow to rise for 30 mins.
Cook on a pizza stone at high temperature. I do this on the barbecue at approx 600 degrees. They cook in only a few minutes. If properly handled, they will puff up into beautiful pockets.
