Mix and store starter in glass, plastic or stoneware. Allow the starter to come to room temperature before using. Gently stir the starter to mix the ingredients before measuring or using starter. If properly cared for, the starter should last indefinitely, but if it becomes too sour tasting or discolored, discard it and make a new batch of starter.
Blend together and pour into a glass jar with a loose fitting lid. Leave 3-5 days on the counter or in refrigerator.
Remove from the frige and feed the following:
1/2 c sugar
3 tbsp potato flakes
1 cup warm water
Stir well to mix, and leave at room temperature 10-12 hours.
