Rub 2 tablespoons magic dust on chicken and seal in sous vide bag with the liquid smoke.
Soys vide at 64'c for 1 hour.
Preheat oven to 240'c.
Add 1 tablespoon magic dust into breadcrumbs. Add few pinches of salt to flour. Whisk egg.
When chicken soys vide is done, remove chicken and lightly pat dry.
Dust chicken in flour, then dip to coat in egg, then finally coat with bread crumbs. Be liberal with the crumbs.
Place on a wire rack over cooking tray.
Spray chicken very lightly with a little veritable or rice bran oil.
Place in oven for 10-15 min until crust turns deep brown.
Serve with grits, waffles or whatever else takes your fancy with traditional fried chicken.
