1. Preheat sous vide to 194 degrees F (90 C).
2. Peel potatoes, cut into batons, keep in water to prevent browning.
3. Make brine: combine water, salt, glucose syrup (or sugar), and baking soda. Whisk together until dissolved.
4. Place fries in bag with equal weight of brine (about 1 cup for large bag). Space in one even layer.
5. Cook for 15 minutes
6. Gently remove fries from bag. Save the bags, dry for later use. Lay the fries on wire rack, not touching each other to cool and let surface dry. (Place in chamber vacuum. The falling pressure will cause surface water to quickly evaporate).
7. Heat oil to 266 degrees F (130 C). Fill large pot about halfway, use enough oil that temperature can be maintained. Make sure pot is deep enough to keep oil from boiling over.
8. Fry in small batches, carefully lowering the fries into the hot oil with a strainer or slotted spoon. Fry for 5 - 8 minutes, until surface begins to feel dry and firm to the touch when lifted out of the oil.
9. Remove the fries from the oil and place on a wire rack to cool and dry.
10. Place back in vacuum bags in single layer, vacuum seal and place in freezer. Freeze for at least four hours, or until ready to use.
11. Heat oil to 374 degrees F (190 C). Fry in small batches about 1 minute 45 seconds, or until surface is golden brown and bubbles slow to a trickle, which indicates that the crust is dry and crisp.
12. Drain fries on paper towels, season with fine salt and pepper if desired.
