Separate white meat from dark and brine both before Sous vide.
Completely thaw each turkey. Separate the thighs and drumsticks from the breast, cut out backbone and cut each breast in half. Remove skin if you do not intend to crisp before serving.
Mix each brine with enough cold water to cover all turkey pieces and place pieces in the appropriate brine. Brine in refrigerator for 3 to 4 days.
After brining is complete, remove turkey from brine and rinse and pat dry. Coat the dark meat with your favorite rub and place in bag with 1 tsp liquid smoke per bag. Vacuum seal the bag. Place the white meat in bag along with fresh thyme and rosemary. Vacuum seal the bag.
Preheat Sous vide water to 150 degrees. Place dark meat in water and cook for 12 hours. After 12 hours, reduce temperature to 131 degrees and add white meat. Cook, along with the dark meat, for 12 hours.
Once cook time has lapsed, place bags in ice water to reduce temperature. Remove meat from bags and slice to serving sizes. Rebag and vacuum. You may consider adding more fresh herbs to white meat and more rub and liquid smoke to dark meat.
To heat for serving, preheat water to 135 degrees. Place meat in water at least 2 hours prior to serving.
