South American Quinoa and Corn Soup
1) Use scissors to cut the Italian Sausage and add Canola Oil into the largest pot
2) Start the pot on medium heat
3) Dice the Onions, Red Pepper and Celery. Quarter or dice the Jalapeno Pepper (remove the pulp and seeds!)
4) When the sausage is done, add the above to the pot
5) Add Garlic
6) Saute the ingredients for 8 minutes
7) Mix all the spices in a bowl
8) When the veggies are ready, add Tomatoes and Spices
9) Saute for 8 minutes more, until the mixture forms a thick pulp
10) Rinse the Quinoa thoroughly
11) Add the Water or Broth, Quinoa and Corn
12) Bring to a simmer, and then cook for 25 minutes over medium low heat. Stir occasionally.
13) Stir in the Chickpeas and cook for another 10 minutes
14) Turn off and let the soup stand for 15 minutes before serving
