This is a southern variant of the traditional French cuisine chicken cordon bleu. Duw to its Americanness, I had to translate the name of this dish, as the French would probably not consider it the same dish. It is much easier to prepare than the french counterpart, and uses traditional american ingredients.
This was my very first dish i created when i was about 8 years old, and have been perfecting it over the last 30 years. These go great sliced as hors d'ouvres or kept whole for a family meal.
1. Prepare the spice rub by mixing the thyme, basil and garlic salt. You can optionally use Italian seasoning instead of thyme and basil if you wish.
2. Cut cheese block into 4 pieces. They should be about the length of one chicken breast, after being flattened.
3. Flatten the chicken breasts to about a quarter-inch thickness. You will probably need the surface area, but it doesn't have to be precise, but it won't cook properly if it is thicker than 1/2". Rub the seasoning mix over all the chicken breasts.
4. For each chicken breast:
4a. Place cheese piece into chicken breast and roll the chicken up. To prevent leakage, use the left over "flaps" on the ends of the roll are covering the ends and hold in place with a toothpick.
4b. Wrap a bacon slice around the roll so it covers the most area on the outside.
5. Place in a baking pan and cook at 350 for about 50 minutes, or until done.
Do not spare the toothpicks!
