Preheat oven to 375 degrees. Spray muffin pan with butter cooking spray. In large bowl, mix ingredients in order. Batter will be sticky. Do not overwork batter. Fill muffin pan with batter. Lightly brush batter with melted butter. Bake 15-20 minutes or until golden brown. Brush with butter when done (optional). Serve warm. Great with honey! Enjoy!
