Cut the stalks off the greens, cut the leaves from both sides on the stalks.
Soak the leaves for 30-45 mins in clear warm water.
Wash the leaves in warm water for about 7-10 mins.
Dice onion, garlic, slice bacon/ham hock/salt pork into bite sized chunks
Slice open peppers, use food gloves for this! For a milder flavour, cut tr seeds from the inside with a knife. I suggest using at least one seeded pepper.
Fill up a large pot with water up to about 1/5.
Make 4-6 layers of greens-meat-onions-garlic-salt and pepper.
Add peppers to middle layer.
Cover with a good lid and bring to a boil, then simmer on low heat for 3-5 hours, turning the layers over every 30 mins or so.
Make sure to keep the lid on tight to steam the greens.
When fully cooked, the greens should be very dark green and almost melt in your mouth.
Turn off the stove, add a small amount of salt and pepper to taste, butter and soy sauce.

Don't overdo the salt! If you do, regular white vinegar will cut the salt taste. but sont use too much of that either! And don't be discouraged if it doesn't turn out the best the first few times, you will find your own way to make them
