Corn quiche
Preheat oven to 400. Bake pie crust on bottom shelf per package directions until only slightly brown, 12 to 15 minutes. Cool shell on wire rack and brush with lightly beaten egg white. Set Aside.
Lower oven temp to 375.
Heat oil in small skillet. Stir in sage, pepper flakes, allspice, and saute over low heat 3 or 4 minutes, stirring. remove pan from heat and sete aside.
Combine in a large bowl the sage misture, eggs, milk, salt and black pepper. Beat briskly until well blended.
Stir in corn and half of the grated cheese. Pour the custard mixture into the lightly baked pie crust. Sprinkle the top of the pie with remaining cheese.
Set filled pie pan on lower shelf of hot oven. Bake for 30 to 35 minuttes or until it is puffed and lightly browned and a knife inserted into the center comes our clean. If the pastry edge begins to brown too quickly during baking, cover it with strip of foil.
When done, remove quiche from oven and let set for a few minutes, then cut into wedges for serving. If serving later, cool on wire rack, when ready to serve, reheat in 325 detree oven for about 10 minutes and serve immediately
