This is a medium hot Southern fried chicken recipe that will warm the lips without losing the flavor. The recipe can use any type of chicken but I make it with boneless chicken breasts for my family.
Toss chicken with black pepper, salt, and Seasoning Salt in a large bowl. Cover and refrigerate while preparing the rest of the ingredients. (Note: For even better flavor you can allow chicken to chill for several hours or overnight.)
In a large frying pan or Dutch oven, pour about 2 inches of vegetable oil. Using a deep-fry thermometer, heat oil over medium heat until thermometer registers 325° F.
While oil is heating, whisk together eggs, milk, and hot sauce in a bowl large enough to dredge breasts in. Put flour in a similar sized bowl.
Remove chicken from bowl and pat dry. Working with one piece at a time, dredge chicken in flour and shake off excess. Then dip in the milk mixture allowing excess to drip off into bowl. Then dredge in flour again and place on a baking sheet. Repeat with all chicken.
Working with batches of four, and returning oil to 325° F between batches, fry chicken, turning occasionally, until the batter is a deep golden brown and crisp and an instant read thermometer reaches 160° for white meat or 165° for dark meat. (Usually around 15-20 minutes or so).
Transfer to a wire rack placed inside a baking sheet to drain. Let oil cool slightly.
While oil is cooling, whisk together cayenne, dark brown sugar, chili powder, and garlic powder in a medium bowl. Using a metal ladle or other suitable device, carefully whisk in one cup of the hot frying oil into the mixture. Whisk in maple syrup.
Brush fried chicken liberally with the spicy oil.
To complete this hot chicken meal serve with other southern style foods such as green beans with onions and bacon, BBQ baked beans, Southern style potato salad and a glass of sweet iced tea.
