2. Prepare all of the ingredients as listed in the recipe.
3. Preheat the pan and avocado oil over medium heat.
4. Add the sweet potato and onion to the pan and sauté for about 5 minutes or until it begins to brown.
5. Add the red bell pepper, sweet corn, back beans and green beans, and ham to the pan and sauté for one minute.
6. With the back of a spoon, make six wells in the mixture in the pan.
7. Crack and egg into each well.
8. Place the skillet in the oven for 5-7 minutes or until the eggs are mostly set.
9. Remove the pan from the oven and top with avocado, cilantro, Valentina, Cotija cheese and sprouts.
10. Serve by scooping out an egg, along with the surrounding goodies.
