Prepare SW Seasoning Mix-begin w/ 1 T. chili powder and next 7 ingred. Place all ingred in blender or spice grinder and blend. Transfer to glass jar and store up to 1 month in cool, dry place.
*To prepare chicken, need 3 T. SW seasoning mix.
Preheat oven to 375?. Lightly oil baking dish large enough to hold chicken breast in single layer. In small bowl, stir together SW mix and bread crumbs; set aside.
Cut pocket along length of each breast, keeping on edge attached, fold back top of pocket. Line each pocket w/slice of cheese and top with rows of peppers. Season peppers w/ 1/4 t. chili powder, s/p. Top w/slice of cheese. Fold top back over filling and secure w/toothpicks.
Coat both sides w/ SW bread crumb mixture. Place in prepared baking dish; cover and bake for 10 min., remove cover and bake 10 more min. Transfer to cutting board, remove toothpicks and slice diagonally.
